Description
A delicious teriyaki chicken stir fry served with rice and fresh vegetables in a homemade teriyaki sauce.
Ingredients
- 2-3 chicken breasts, boneless and skinless, cut into 1-inch chunks
- 2 cups rice
- 2 cups water
- 1-2 tablespoons vegetable oil or olive oil (for stir fry)
- 1-2 teaspoons vegetable oil (for rice)
- 1-2 onions, sliced thin
- 1 red pepper, sliced
- 1 green pepper, sliced
- Carrots, quartered baby carrots or matchstick size
- ¼ cup low sodium soy sauce
- ½ cup water
- 1 tablespoon cornstarch
- ¼ cup honey
- Aluminum foil
Instructions
- Rinse rice well and add to instant pot with equal parts water (2 cups rice/2 cups water or 1 cup rice/1 cup water)
- Add 1-2 teaspoons vegetable oil to instant pot before adding rice to prevent sticking
- Cook rice using rice setting with quick release
- Cook chicken chunks in vegetable oil for 10-12 minutes
- Cover cooked chicken with foil to keep warm
- Heat 1-2 tablespoons oil in a pan for stir frying vegetables
- Add sliced onions, red pepper, green pepper, and carrots to pan
- For the sauce, combine ¼ cup soy sauce, ½ cup water, and 1 tablespoon cornstarch
- Heat sauce mixture until thickened
- Add ¼ cup honey to the thickened sauce and heat briefly
- Add cooked chicken back to the vegetable mixture and heat gently
- Pour sauce over the chicken and vegetables to moisten
Notes
- Recipe can be made with either 1 or 2 cups of rice with equal parts water
- Sauce recipe can be doubled but one batch is usually sufficient
- Additional sauce can be served on the side
- Add honey at the very end to prevent burning
- Don't use too much oil when stir-frying vegetables
