Teriyaki Chicken Stir Fry
A delicious teriyaki chicken stir fry served with rice and fresh vegetables in a homemade teriyaki sauce.
Ingredients
- • A delicious teriyaki chicken stir fry served with rice and fresh vegetables in a homemade teriyaki sauce.
- • 2-3 chicken breasts, boneless and skinless, cut into 1-inch chunks
- • 2 cups rice
- • 2 cups water
- • 1-2 tablespoons vegetable oil or olive oil (for stir fry)
- • 1-2 teaspoons vegetable oil (for rice)
- • 1-2 onions, sliced thin
- • 1 red pepper, sliced
- • 1 green pepper, sliced
Instructions
- 1 Rinse rice well and add to instant pot with equal parts water (2 cups rice/2 cups water or 1 cup rice/1 cup water)
- 2 Add 1-2 teaspoons vegetable oil to instant pot before adding rice to prevent sticking
- 3 Cook rice using rice setting with quick release
- 4 Cook chicken chunks in vegetable oil for 10-12 minutes
- 5 Cover cooked chicken with foil to keep warm
- 6 Heat 1-2 tablespoons oil in a pan for stir frying vegetables
- 7 Add sliced onions, red pepper, green pepper, and carrots to pan
- 8 For the sauce, combine ¼ cup soy sauce, ½ cup water, and 1 tablespoon cornstarch
- 9 Heat sauce mixture until thickened
- 10 Add ¼ cup honey to the thickened sauce and heat briefly
- 11 Add cooked chicken back to the vegetable mixture and heat gently
- 12 Pour sauce over the chicken and vegetables to moisten
- 13 - Add honey at the very end to prevent burning
