Marinated chicken kabobs grilled with fresh vegetables and pineapple on charcoal for a complete meal.
Ingredients
- ¾ cup vegetable oil
- ⅓ cup soy sauce
- ¼ cup red wine vinegar
- ¼ cup lemon juice
- 2 Tablespoons Worcestershire sauce
- 2 teaspoons ground mustard
- 1 teaspoon black pepper
- 1 teaspoon dried parsley
- 2 lbs white chicken breast, cut in 1-inch cubes
- 2-3 green or red bell peppers, cut in 1-inch chunks
- 1 fresh pineapple, cut into 1-inch squares
- 2-3 Vidalia onions (or regular onions), cut in 1-inch chunks
- 8 metal skewers
Instructions
- Combine vegetable oil, soy sauce, red wine vinegar, lemon juice, Worcestershire sauce, ground mustard, black pepper, and dried parsley in a large ziplock bag placed in a bowl.
- Add chicken cubes to the marinade.
- Refrigerate for 3-4 hours, turning bag occasionally.
- Prepare charcoal grill with chimney starter. Wait about 20 minutes until coals have gray edges.
- While coals are heating, thread metal skewers alternating chicken, bell peppers, pineapple chunks, and onions.
- Grill skewers covered for 20-25 minutes, turning every 5 minutes.
- Remove from skewers and serve all together in one big bowl.
Notes
- Use only fresh pineapple, not canned
- Discard marinade after use - do not brush on kabobs while grilling
- Vidalia onions are best but only available in spring
- Leftovers reheat well
- Makes a complete meal on its own
