Carolina-Style Vinegar BBQ Chicken

A tangy, sweet Carolina-style barbecue chicken made in the slow cooker, perfect for sandwiches.

Ingredients

  • A tangy, sweet Carolina-style barbecue chicken made in the slow cooker, perfect for sandwiches.
  • 2 cups water
  • 1 cup white vinegar
  • 1/4 cup sugar
  • 1 tablespoon reduced-sodium chicken base
  • 1 teaspoon crushed red pepper flakes
  • 3/4 teaspoon salt
  • 1-1/2 pounds boneless skinless chicken breasts

Instructions

  1. 1 In a small bowl, mix water, vinegar, sugar, chicken base, red pepper flakes, and salt
  2. 2 Place chicken in a 3-qt. slow cooker and add vinegar mixture
  3. 3 Cook, covered, on low for 4-5 hours or until chicken is tender
  4. 4 Remove chicken and cool slightly
  5. 5 Reserve 1 cup cooking juices and discard remaining juices
  6. 6 Shred chicken with two forks
  7. 7 Return meat and reserved cooking juices to slow cooker and heat through
  8. 8 Serve on buns if desired
  9. 9 - Pairs well with blush wines like White Zinfandel or Rosé
  10. 10 - Can be served as a sandwich or on its own
