Carolina-Style Vinegar BBQ Chicken

Description

A tangy, sweet Carolina-style barbecue chicken made in the slow cooker, perfect for sandwiches.

Ingredients

  • 2 cups water
  • 1 cup white vinegar
  • 1/4 cup sugar
  • 1 tablespoon reduced-sodium chicken base
  • 1 teaspoon crushed red pepper flakes
  • 3/4 teaspoon salt
  • 1-1/2 pounds boneless skinless chicken breasts
  • 6 whole wheat hamburger buns, split (optional)

Instructions

  1. In a small bowl, mix water, vinegar, sugar, chicken base, red pepper flakes, and salt
  2. Place chicken in a 3-qt. slow cooker and add vinegar mixture
  3. Cook, covered, on low for 4-5 hours or until chicken is tender
  4. Remove chicken and cool slightly
  5. Reserve 1 cup cooking juices and discard remaining juices
  6. Shred chicken with two forks
  7. Return meat and reserved cooking juices to slow cooker and heat through
  8. Serve on buns if desired

Notes

  • Look for chicken base near the broth and bouillon
  • Pairs well with blush wines like White Zinfandel or Rosé
  • Can be served as a sandwich or on its own
