Carolina-Style Vinegar BBQ Chicken
A tangy, sweet Carolina-style barbecue chicken made in the slow cooker, perfect for sandwiches.

Ingredients
- • A tangy, sweet Carolina-style barbecue chicken made in the slow cooker, perfect for sandwiches.
- • 2 cups water
- • 1 cup white vinegar
- • 1/4 cup sugar
- • 1 tablespoon reduced-sodium chicken base
- • 1 teaspoon crushed red pepper flakes
- • 3/4 teaspoon salt
- • 1-1/2 pounds boneless skinless chicken breasts
Instructions
- 1 In a small bowl, mix water, vinegar, sugar, chicken base, red pepper flakes, and salt
- 2 Place chicken in a 3-qt. slow cooker and add vinegar mixture
- 3 Cook, covered, on low for 4-5 hours or until chicken is tender
- 4 Remove chicken and cool slightly
- 5 Reserve 1 cup cooking juices and discard remaining juices
- 6 Shred chicken with two forks
- 7 Return meat and reserved cooking juices to slow cooker and heat through
- 8 Serve on buns if desired
- 9 - Pairs well with blush wines like White Zinfandel or Rosé
- 10 - Can be served as a sandwich or on its own
