Carolina-Style Vinegar BBQ Chicken

Description
A tangy, sweet Carolina-style barbecue chicken made in the slow cooker, perfect for sandwiches.
Ingredients
- 2 cups water
- 1 cup white vinegar
- 1/4 cup sugar
- 1 tablespoon reduced-sodium chicken base
- 1 teaspoon crushed red pepper flakes
- 3/4 teaspoon salt
- 1-1/2 pounds boneless skinless chicken breasts
- 6 whole wheat hamburger buns, split (optional)
Instructions
- In a small bowl, mix water, vinegar, sugar, chicken base, red pepper flakes, and salt
- Place chicken in a 3-qt. slow cooker and add vinegar mixture
- Cook, covered, on low for 4-5 hours or until chicken is tender
- Remove chicken and cool slightly
- Reserve 1 cup cooking juices and discard remaining juices
- Shred chicken with two forks
- Return meat and reserved cooking juices to slow cooker and heat through
- Serve on buns if desired
Notes
- Look for chicken base near the broth and bouillon
- Pairs well with blush wines like White Zinfandel or Rosé
- Can be served as a sandwich or on its own
