Description

Classic beer-simmered bratwurst finished on the charcoal grill for a perfect brown exterior.

Ingredients

  • 5 bratwurst sausages (can be frozen)
  • 2-3 cans beer
  • 1 large or 2 small onions, roughly chopped
  • 1 sheet newspaper (for charcoal starting)
  • Charcoal
  • 1 can baked beans (optional)

Instructions

  1. Place brats, beer, and roughly chopped onions in a crockpot or stovetop pot
  2. Simmer on low for 1-3 hours (minimum 1 hour, maximum 3 hours), ensuring mixture doesn't boil dry
  3. Prepare charcoal grill by placing newspaper at bottom of chimney starter and filling with charcoal
  4. Light newspaper and let coals heat for about 20 minutes until they have gray edges
  5. Arrange coals in single layer on grill
  6. Grill brats with lid open for about 3 minutes per side, turning frequently to prevent burning
  7. Optional: Place can of baked beans in small cast iron skillet and warm over coals alongside brats

Notes

  • Brats are fully cooked after simmering; grilling is just for browning and flavor
  • Do not allow the beer mixture to boil dry during simmering
  • Keep grill lid open while cooking brats
  • Use only one layer of coals on the grill
